Cheesy Broccoli Rice Casserole

Hi there! I have a delicious recipe for all of you tonight. It’s one of Kevin’s favorites…his Mom actually gave me the recipe, so I decided to try it out! It is absolutely delicious, and super easy to make. Now, I’m sharing it with all of you! I’m going to get straight to the point…because this is currently sitting in my kitchen waiting to be devoured, so here goes nothing!
2 cups of white rice
2 cans of Cream of Celery soup
One bag of frozen broccoli (I used a Steamer Bag, you can use fresh as well!)
12 ounces of Velveeta or Cheez Whiz (You can use more if you like it really cheesy!)
{ 1 } Steam or cook the broccoli and set it aside. Cook the rice according to the directions on the box. (I used my Rice Cooker from Pampered Chef for this…easy peasy!)
{ 2 } Heat the Cream of Celery soup with 1/2 a can of water. Add the Velveeta or Cheez Whiz and stir until the cheese is melted.
{ 3 } Remove from heat, and stir in the cooked rice and broccoli.
{ 4 } Pour the mixture into a greased baking dish.
{ 5 } Bake at 350 degrees for 25 to 30 minutes.
Viola! I hope you enjoy this recipe. Let me know if you try it! Keep on smiling, friends…it is almost the weekend!
