Italian Chicken, Green Bean & Potato Casserole

Okay, not really – but maybe! Today on the blog
I am sharing one of our fool-proof dinner favorites. The prep-time is less than
10 minutes, it’s a casserole (which means you can make it ahead if you need to),
and best of all, my toddler LOVES IT. If you have a toddler, maybe yours will
too πŸ™‚

Allow me to introduce you to this delicious
dish: Italian Chicken, Green Bean, and Red Potato Casserole.
What you
Need:
+ 1 packet of Italian dressing seasoning
+ 1 stick of butter (or you can substitute
coconut oil for the butter)
+ 3 to 4 chicken breasts
+ Two cans of green beans (fresh or frozen green
beans are even better!)
+ 8 – 10 red potatoes
What you Do:
+ This recipe is so simple! First, you need to
scrub your potatoes and then dice them. I leave the skins on, but it’s your
preference. Line up your freshly diced potatoes on one side of the casserole
dish.
+ Cut your chicken breasts in half. Line them up
in the center of the casserole dish.
+ Fill in the remaining space with green beans.
+ Melt the stick of butter and pour it all over
the beans, chicken, and potatoes.
+ Sprinkle the contents of the Italian seasoning
packet over everything.
+ Cover with foil.
+ Bake at 350Β° for at least an hour. You’ll know it’s
done when the potatoes are soft. Sometimes it takes a little bit longer than an
hour. If it is taking longer than an hour, you can turn up the temperature to 375 degrees or so.
+ Enjoy!

This is one of our favorite meals to make during
the week because it doesn’t take long to prepare (I usually get it ready on
Sundays, so we can pop it in the oven as soon as we get home from work on
Monday.)

  6. Tonight we are having baked potato soup. Well, at least Kev and I are. Cass will try it. Lucas will probably have something else as he doesn't like it.

    My current favorite thing to make though is pepperjack chicken. So delicious.
